The tray fills at 6:30 and empties when we close.

In at 4am, under the moon

We're Jana and Lucie Novak. Our grandmother, Babi Ludmila, baked kolaches in West, Texas for church festivals for fifty years. The dough recipe is hers, written on an index card we keep by the mixer.

The dough goes in at 4am, usually with the moon still up, which is where the name comes from. The doors open at 6:30, and we close when the trays are empty.

We've been baking in Denton, near the square, since 2021.
